Vegetable broth

Ingredients for 4 people

  • 4 stalks of celery
  • 2 carrots
  • 3 onions
  • 1 zucchini
  • Herbs (parsley, thyme, marjoram)
  • 3 bay leaves
  • Equilibrium Intelligent Food extra virgin olive oil
  • Pepper in grains


  • Wash the vegetables well. Cut them into pieces;
    Remove the peel from the onions and then cut them into pieces;
  • With a kitchen string tied together the aromatic herbs;
    In a large pot sauté celery, carrot, onion, and zucchini for 2 minutes on a gentle flame;
  • Cover everything with 3 liters of cold water;
    Add the aromatic bunch, the bay leaf and a small handful of pepper;
  • Boil for 30 minutes (the flame should, therefore, be moderate, skimming occasionally);
  • At the end of cooking, filter the broth obtained.
