Sicilian Panelle with cumin

Ingredients for 4 people

• 500 g of Equilibrium Food chickpea flour
• 1.5 l of water
• 20 g of salt
• 1 teaspoon of cumin
• 1 tablespoon chopped parsley
• Extra Virgin Olive Oil Equilibrium Food

Preparation

• Put cold water in a pot. Add the chickpea flour sifted with the cumin and start mixing (it is important that the water is cold in order to prevent or in any case, make the formation of lumps more difficult);
• Put the pot on the stove and start cooking stirring with a whisk (this will also help to prevent the formation of lumps);
• After about ten minutes your preparation will become creamy. Remove from heat and add salt and minced parsley;
• In the event that you have formed some lumps before adding the parsley blend everything with an immersion blender and solve the same problem;
• Pour the mixture into a rectangular pan and let it cool completely;
• Once cold cut out your panelle, helping yourself with a pastry ring or in the absence of a glass;
• Place them on a baking sheet, sprinkle with a little oil and bake at 200 degrees for 8/10 minutes turning them halfway through cooking;
• You can serve your Sicilian panelle using them as a seasoning for a sandwich or enjoy them by spraying them with lemon juice.
