Baked calzone with zucchini

Ingredients for 4 people

For the dough

  • 10 g of yeast
  • 500 g of Equilibrium whole wheat flour
  • 300 ml of water
  • 8 g of salt
  • 1 teaspoon of honey

For the stuffing

  • Half onion
  • 200 g of zucchini
  • Equilibrium extra virgin olive oil
  • Salt


  • Prepare the dough. Start mixing water and flour together. Then add the yeast dissolved in a little warm water;
  • Then add the salt, honey and finally the oil;
  • Knead vigorously for 10 minutes;
  • Form a ball with the dough and place it to rise covered in a dry place at a constant temperature for 3 hours. At the end of the leavening the dough must have doubled its volume;
  • Divide the dough into 8 loaves and let it rise another hour;
  • Meanwhile, prepare the filling. Fry the onion in two tablespoons of oil;
  • Add the sliced zucchini thinly and cooked. Then let it cool completely;
  • Take back the dough and spread them trying to give them a circular shape.
  • Fill them with the courgettes, fold the dough on itself and seal it;
  • Bake the oven at 200 degrees for 20 minutes.
