Penne with broccoli and cauliflower

Ingredients for 2 people

  • 150 g of penne
  • 200 g of clean broccoli
  • 100 g of red cabbage
  • 3 tablespoons of red wine
  • Extra Virgin Olive oil Equilibrium
  • Salt
  • Pepper


  • Cut the broccoli and reduce it into florets;
  • Cook it in boiling salted water for about 10 minutes and then drain it with a perforated spoon;
  • Blend part of the broccoli, adding a little cooking water if necessary, and salt the cream obtained;
  • Meanwhile, cut the red cabbage into strips and cook for 1 minute in a pan, on a gentle flame, with a tablespoon of oil. Then add the wine and cook for another 10 minutes adding a little bit of hot water if the bottom should dry out too much;
  • Cook the penne in broccoli cooking water;
  • Once the penne are drained, add them to the red cabbage, adding a spoonful of cooking water to whisk;
  • Finally, add the broccoli to the cream, let flavor and serve.
