Cauliflower croquettes and flax seeds

Ingredients for 4 people

  • 500 g of cauliflower florets
  • 1 egg
  • 2 tablespoons of flax seeds
  • Breadcrumbs
  • Salt

Preparation

  • Reduce the cauliflower in florets, first removing the outer leaves and then cutting the individual florets near the central core;
  • Cook the cauliflower in plenty of boiling salted water for 10 minutes. Pay attention to the cooking times, if too long they will deprive the cauliflower of its nutritive properties;
  • Once cooked, blend the cauliflower by adding a spoonful of cooking water if at the beginning it should be too compact;
  • Knead the cauliflower puree with the egg and flax seeds. Add salt;
  • Finally, add the breadcrumbs whose function is to dry the dough, then incorporate enough to make the mixture dry enough (even if the dough will always remain soft and sticky);
  • Form the balls with the dough and then mash them lightly in such a way as to form a croquette;
  • Bake at 200 degrees for 10 minutes.
