Marinated asparagus and flax seeds

Ingredients for 4 people

  • 250 g of asparagus
  • 1 tablespoon of apple vinegar
  • 3 tablespoons of Extra Virgin Olive Oil Equilibrium Food
  • Half a teaspoon of salt
  • 50 g of Equilibrium Food flax seed


  • With a fork, beat the vinegar and salt together until the salt has completely melted. The operation will be easier if you use a blender;
  • Always stirring add the oil and continue to beat until the sauce is homogeneous;
  • Clean the asparagus and remove the hardest and fibrous outer parts;
  • Helping you with a potato peeler slice them in very thin strips. Put the sliced asparagus into a bowl, pour over the prepared emulsion and mix well;
  • Put the asparagus to rest in the fridge for at least two hours;
  • Toast the flax seeds in the oven at 200 degrees for 5 minutes;
  • Serve the asparagus sprinkled with flax seeds.
